Hi there Folk over here have done everything from rotaries to big block Chevrolets (454ci+) it all depneds on how extreme you want to go and how much you want ot spend...the other thing to watch is the weight. The heavier the engine, the worse the chassis and 4X4 performance. Heavier engines also pay a performance penalty for the HP gained.
Right now I'm building all the pieces to put the 2.0L Suzuki into the SideKick for my wifes 4dr. It's a great compromise of weight vs power. IE: The 2.0L is only marginally heavier (20-40lbs) gives almost 50% more power and not that many mods to install.

mine has a 4 cylinder 1995cc engine. stock Suzuki, its a special edition Ive heard they have it in Europe and down hear, also my chassis is a little wider than the standard sidekick/vitara, like the other guys say the Sky's the limit it all depends on your wallet.

I know about the 1.8/2.0 Vits that were built, you're right the parts won't work for a 1.6 swap as they widened the frame rails (darn), thats why I,m building my own conversion.
